THE UK’s youngest Michelin-starred chef, Tommy Banks, brought his high dining experience to a pop-up restaurant in North Yorkshire.

Mr Banks, from The Black Swan in Oldstead, brought his expertise to diners at Lockwood’s restaurant in Ripon on Friday night (February 26). The acclaimed chef served up a five-course meal at the restaurant. The menu was designed to be unique to the event and included ingredients from The Black Swan’s kitchen garden which had been harvested and preserved in interesting ways.

The dishes included aged Galloway beef with smoked bone marrow and wild garlic capers.

Matthew Lockwood, from the Ripon restaurant, said: "Tommy loved conjuring up his courses at Lockwoods and it went down so well with our diners. The night was a huge success. Our thanks to Tommy and his team.”

Tommy is not formally trained. He started working in the kitchen at Oldstead when he was 18 and at the age of just 24 earned his first Michelin star, after taking up the position of Head Chef in 2014.

The Black Swan, in Oldstead near Thirsk, is now the only restaurant in Yorkshire and the North-East to hold both Four Rosettes in the AA’s Restaurant Guide and a Michelin Star.
