A CHEF from a Michelin-starred restaurant staged a “pop-up” version at a small coffee shop.
Tom Anglesea, who heads the kitchen at The Red Lion Freehouse, in Pewsey, Wiltshire, hosted the event at Flat White, a Durham City venue part-owned by his brother, Peter.
Customers were served six courses made with fresh ingredients brought up from Wiltshire. The menu included smoked salmon and 48-hour masterstock ox cheek, with wine specially selected for each dish.
Tom Anglesea said: “The pop-up restaurant was the first one I’ve done but it was a great success.
“I miss Durham and wanted to give Flat White something special to warm up a cold January. It’s definitely something we’d love to do again.”
His brother, who opened the Elvet Arch coffee shop in December 2010, said: “When Tom asked if he could use Flat White as the pop-up restaurant, I thought it was just what Durham needs – the chance for people to appreciate really good food in a pleasant, homely environment.”
