A MARRIED couple is spicing things up by opening a Pan-Asian food business at Darlington Market.

The impending arrival of Bao Wow, set to open within weeks, will be the next addition to the market operated by Market Asset Management (MAM).

The business will serve “exciting, different and healthy food” including bao specialities, a steamed Taiwanese bun stuffed with a choice of braised belly pork, Korean fried chicken, or smoked tofu.

Other dishes will include Salmon Poke, an Hawaiian dish with Japanese roots that includes a variety of vegetables, nuts and seeds served on a bed of seasoned short grain rice. The jewel of the dish is seasoned raw fish.

Customers can also order a Rendang, a Malaysian and Indonesian specialty with melt-in-the-mouth beef cooked for a minimum of 12 hours and served with steamed jasmine rice and a variety of vegetables and pickles.

Today Alicia Horsley, who will run the venture with husband Jonathan, said the couple has decided to take the plunge after their delicious food won the plaudits of customers during lockdown when they launched a home delivery service.

Alicia is from Malaysia orginally and who met her English husband while they were studying at the University of Birmingham.

She said: “We’ve always been happiest when we get to spend loads of time together. We’re hoping the stall will allow us to grow together and give us the opportunity to share our passion for the varied food cultures of the places we’ve been too.

“We have been married 22 years so we really work together. I love Darlington Markets, it reminds me of vibrant food courts everywhere, back in Asia.

“All the traders and Market Asset Management have been so welcoming and supportive, and we can’t wait to open.”

Bao Wow will occupy the space left by departed burger business What’s Your Beef.

Hayden Ferriby, commercial director at MAM, said: “We look forward to welcoming Bao Wow very shortly. It is an exciting business whose delicious and unique food will go down a treat with our customers who are spoilt for choice when it comes to fantastic food from our independent street food vendors.”
