A CATHEDRAL cafe will make pancakes to a 250-year-old recipe next week (February 17), for Shrove Tuesday.
Staff at Durham Cathedral’s Undercroft Restaurant will mark the traditional Christian feast before the beginning of Lent by cooking pancakes to a mid-18th century recipe for Des Gateaux mince frit an Poel, or Apple Fritter Pancakes, taken from a Georgian cookery book, The Art of Cookery, from 1758.
Ingredients include apples, sugar and Seville oranges. The full recipe can be found online at durhamcathedral.co.uk
The cookbook was written by John Thacker, cook to the Dean and Chapter of Durham Cathedral from 1739 to 1758, and features 650 recipes invented and developed by Mr Thacker himself.
Restaurant manager Richard Dos Santos said: “Thacker’s recipe book is a wonderful resource and offers a fantastic insight into the culinary tastes of the Cathedral Dean and Chapter in the 18th century.
“We look forward to bringing history to life and sharing this recipe with our customers on Shrove Tuesday.”
The Undercroft Restaurant is open daily from 10am to 4.30pm.
