Morning Readers! I hope you've all had fantastic results from the scales this week, whether it be a fantastic loss or even a thank goodness I only gained that amount as I was expecting it to be much worse. However you've done, give yourselves a huge pat on the back.

Yes, even if you did gain! At the end of the day, you still braved the scales and didn't give up which to be honest, would have been the easier option. There really isn't any shame in a gain. I know we give ourselves a hard time over it but when you think about it, do we really have to?

We all have times when we have special events in our lives, or even times where the cravings kick in. We can't avoid those times, so we have to be able to let our hair down from time to time. The secret is, once those times have passed, you have to draw a line under it and move on.

If you did a survey of every single person who has reached their target on any diet or healthy easting plan, if they have ever gained whilst on their weight loss journey, I am pretty sure 100% would say yes.

You can't go through life without letting your hair down from time to time. We'd go mad if we didn't. It's what we do after the event that counts. I went to a Christening earlier in the year and gained. I didn't give up though, I got right back on the plans and lost what I gained the following week. Like I said when I first started this blog months ago, together we can do this, no matter how many times we fall. Trust me, I've fallen of the track many times.

I'm pleased to say that I've had a good week this week. I lost 2lb which has now taken my total up to 7st 6lb. I only have 1lb to go to get to my next half st mini target. I've had my ups and downs along the way but I am getting there. I won't give up until I cross that finish line.

My weight is now 24st 11lb which means I still have 14st 11lb to go but compared to the 22st 3lb I originally had to lose, it doesn't seem impossible now. I'm going to keep plodding on until I get there. I've set myself a challenge to lose another 1st by Christmas. Not meaning to put the fear into people, but it's only 15 weeks away. How much do you want to lose by Christmas? Are you sticking with me or are you giving up at the first sign of trouble?

Bubble & Squeak Cakes (serves 4)

Ingredients
2lb/908g Floury Potatoes
7oz/198g Cabbage
6 Spring Onions
1 Egg Yolk
Salt and freshly ground Black Pepper
Fry Light
4 Tomatoes
4 Eggs
2 x 400g cans Baked Beans

Method

1. Peel and roughly chop the potatoes and boil until tender. Meanwhile, shred the cabbage and finely slice the spring onions. Drain and mash the potatoes and mix with the cabbage. Allow to cool before adding the spring onions and egg yolk. Stir to mix, season and chill until needed.

2. When ready to cook, preheat the oven to 220°C/Gas 7. Divide the potato mixture into eight portions and shape each one into a patty. Place on a baking tray sprayed with Fry Light and bake for 20-25 minutes, or until slightly browned.

3. Meanwhile, halve the tomatoes and fry along with the eggs in Fry Light. Heat the baked beans in a pan. Serve the bubble and squeak cakes with the tomatoes, eggs and beans.

You can use any vegetables you like to make them really yummy. They're great as a snack on a Sunday Evening too especially with the left over vegetables from the Sunday lunch. I sometimes have them with a salad rather than the beans and egg. It's a great, tasty way of making sure you're getting plenty of vegetables as part of your 5 a day but also making sure you don't waste any leftovers or also to use up veggies that are starting to go a bit manky.
