Morning Readers! Well, here we are and into the month of February already. How has your week gone? I'm thrilled to say I lost 2.5lb this week so I'm definitely back on the right road. I can honestly say, this weight loss journey has certainly been a roller coaster ride so far. It's been full of ups and downs but has definitely been worth it so far. I still have a long way to go and I'm not going to give up until I reach my ultimate goal. I have a picture in my head of where I want to be and doing when I reach my target. Someone asked me this week what is the secret of my success. I really had to think about it but to me it has to be the support from my family and friends. The healthy eating plans from Slimming World are definitely part of the success too but the main thing has to be my frame of mind. I've never been so determined to lose the weight before and for me, that determination keeps me going especially when I have bad weeks which we all do from time to time. After all, we're only human.

It's the determination that picks you back up after a bad week. No matter how much you've gained, you have to keep that belief that you can and will do it. It's not easy and there have been times that I have wanted to give up but I keep that picture in my head of where I want to be. Where do you want to be? Do you want to keep going or are you going to give up at the first hurdle? I've said this before and I can't stress the importance of it, "The only real failure in life is the failure to try!". If you've had a bad week and feel as if you've failed, why not pick yourself up and keep going. Draw a line under that bad week and look at the bigger picture of where you want to be. We can do this when we put our minds to it.

Smoked Salmon And Cream Cheese Omelette (serves 1)

Ingredients:

3 eggs

75g of Philadelphia Light Cheese

Salt and Black Pepper

50g of Smoked Salmon Roughly chopped

Dill and Chives Fry light

Method:

1. Separate the egg yolks from the whites then whisk the yolks and Philadelphia until smooth. Season well, then add the salmon and herbs, then stir.

2. In a large glass bowl, whisk the egg whites with and electric hand whisk until they form peaks when the blades are lifted.

3. Preheat your grill to a medium - high heat. Spray a small oven proof frying pan with fry light then place over a medium - high heat. Using a large metal spoon, quickly fold the egg yolk mixture into the egg whites, then pour into the pan and cook for 2-3 mins.

4. Loosen the edges with a palette knife then grill for 1-2 mins. Transfer the omelette to a plate and scatter with a few chopped chives and serve.

This is a recipe taken from this months Slimming World Magazine. I have to say it looks so nice that I can't wait to try it. What recipes will you be trying this week? I always find it's great to try new recipes, it stops you getting bored and stuck in a routine which could also be a downfall.
