Morning Readers. How are we all doing now that Christmas and New Year are out of the way? I have to say, I'm really disappointed this week. I went into group knowing I'd had a great week but also a bit worried as my leg was quite swollen.

I got on the scales expecting a loss but was devastated to find I'd gained 4lb. I was really upset by it, but at the same time I knew that the swelling in my leg had to be the reason. I talked it through with my Consultant, who helped me make sense of it all but also the friends I've made in group were telling me that I was doing so well and that I wasn't to give up.

It just goes to show how important it is to have the right kind of support around you. It would be so easy to give up but I am going to keep going and get to my target no matter how long it takes.It can be very frustrating when you know you've eaten the right things but your body is letting you down. The thing is, do you give up on all your hard work or do you keep chipping away knowing you will get the results eventually?

I'm going to keep chipping away and I'm not going to let anything get in the way of my goal, which is to reach my target and get my confidence back. I want to be healthy, happy and gorgeous. What is going to get in your way of you reaching your target?

This week, I've been trying some soup recipes out as my Husband and I got a soup maker for Christmas. We got a book from Slimming World a while ago called, The Little Book Of Soups but haven't tried many of them until now. This is the recipe for the one we tried this week and I have to say, it is really yummy.

Cauliflower Cheese Soup (serves 4)

Ingredients:

1 large Onion peeled and finely chopped
1/2 tsp Paprika (you can use smoked paprika)
550g small Cauliflower Florets
800ml Vegetable Stock
10 extra light Laughing Cow Cheese Triangles
Salt and Black Pepper
Paprika to garnish
Fry Light Spray

Method:

1. Spray a large saucepan with fry light and heat gently. Add the onions and paprika and cook for 5 mins stirring occasionally until softened.

2. Add the cauliflower and stock and bring to the boil. Cover and simmer for 15 mins until the cauliflower is just tender. Take out a few florets for a garnish.

3. Stir in the cheese triangles then blend until smooth. Add salt and black pepper to taste.

4. Spoon into 4 bowls, add the cauliflower florets and scatter with paprika. Serve immediately.

We will definitely be adding this one to our favourites list. It's warming and comforting especially as we're set for snow next week, but it really is tasty too.
