Morning Readers! I hope you've all had a fantastic week and have been rewarded with the results on the scales. I haven't been well with my M.E. this week so was pleased that I managed to maintain my weight. I hadn't eaten properly and to be honest hadn't eaten some meals at all due to the lack of energy and the fact that I'm in constant pain often means that I can't be bothered. I'm still not 100% but I'm going to make sure I eat this week.

On a positive note, my Slimming World group voted for me to be their Slimming World "Miss Slinky 2012". Slimming World Groups around the country vote for someone in their group that they think inspires them. I have to say, I was shocked as I had to change my group 2 weeks ago and certainly didn't think for one moment that I would even stand a chance.

The people in group said that I am a great inspiration to them. I still can't see it myself as to me I would be someone that people should look at and say, "I'm never getting to that state!" It really means a great deal to me that people do feel inspired by my story and struggle with my weight. I just hope my weekly blogs inspire everyone reading this.

I will always be honest about how I've felt on a weekly basis. Some weeks I'll be feeling on top of the world but I'm sure there will also be weeks where I struggle and need support too. Hopefully, my journey will inspire those of you who feel unhappy with your weight to take action and make those changes so that you can lead a happier, healthier lifestyle. It's far too easy to let those extra few lbs grow until they become an extra 20st like I did. Making a few small changes to your eating habits can make all the difference to your life and the lives of your loved ones.

Toffee Apple Rice Pudding (Serves 4)

Ingredients:

1 Pink Lady Apple

halved and cored 1 Granny Smith apple, halved and cored

200g Pudding Rice

Zest and juice of 1 Orange Zest and juice of 1 Lemon

2 tbsp Sweetener

175g pot Toffee

Müllerlight Yogurt

Method:

1. Cut eight thin slices from the Pink Lady and finely dice the rest of both apples.

2. Place the pudding rice in a saucepan with the orange and lemon zest and juice and 1¼pt/750ml water. Bring to a simmer and cook gently over a medium heat for 20 minutes uncovered, stirring every 5 minutes.

3. Remove from the heat and leave to cool slightly for 10 minutes.

4. Stir the sweetener and most of the yogurt into the rice pudding and divide between four serving bowls. Top with the remaining yogurt, and the diced apple. Garnish with the sliced apple and serve immediately.

Many people from our group have said they like Rice Pudding and I definitely think it's a great recipe to have if you're wanting a winter warmer. Let me know what you think of it.
