I got weighed yesterday morning. I really felt I'd had a good week so was hoping to get a good result. I needed 4lbs to get me to my 4st award.

I got on the scales and found I'd lost 3.5lbs.

“Half a pound short,” Dawn, my Consultant said.

"But don't you usually take your cardigan off?"

I took it off and got back on the scales to find my real weight loss. Can you believe it, I lost another 1.5lbs!

So in total I lost 5lbs and broke through the 4st mark! I even got ‘Slimmer of the Week’ and got to take home all the fruit and healthy goodies that people bring in each week for the prize.

My confidence is going through the roof and I just feel so much more positive. I still struggle with leaving the house on my own but, on the whole, feel so much happier. Can you imagine how I'll feel by the time I get to target? Only 18st left to go! I don't care how long it takes, this time I'm seeing it through to the end and it's never going back on.

I was really inspired by a gentleman in our class this week who has been on holiday for a week. He came back having lost another 2lb which is great. He said that when eating out he'd asked for jacket potato or boiled potatoes instead of chips. I thought that was a great tip and wanted to share it with you here. There’s another tip for chip lovers below!

We were talking about our favourite meals in group yesterday which got me thinking about my favourite. All of the meals on the Slimming World healthy eating plan are so good. One meal that I’ve enjoyed this week as been the Cajun Chicken Breasts with Slimming World Chips and Salad. It's a great winter warmer when the weather gets colder.

Ingredients
Serves 4

4 Skinless Chicken Breasts
2lb Maris Piper Potatoes
Fry Light Spray
Cajun Spice
Tomatoes
Cucumber
Mixed Peppers
Celery
42g of mozeralla cheese

Method

Preheat oven 200 degrees C. Peel the potatoes and cut them into chips. Par boil them.

Drain and leave the potatoes to dry for 10 mins.

Remove all visible fat from the Chicken, coat it in Cajun Spice then wrap in tin foil and place on a baking tray.

Spray a baking tray with the Fry Light Spray Oil and place the potatoes on the tray. Spray them with the spray oil and put in the oven on the top shelf with the chicken on the bottom fro 30-35 mins. Swap the Slimming World chips and chicken around after 15 mins.

Prepare the salad and serve with the chicken and chips. If using the mozzeralla sprinkle it over the chips for cheesy chips, but you don’t have to use the cheese if you don’t want.

LET'S hope it's another good week this week. I'm going out for a meal one night, so hopefully I can choose wisely and still lose weight for next week. Hopefully my friend will notice as I haven't seen her since my 40th birthday which was before I started my weight loss journey. Join me next week to see if she did!
