THE Countryman, in the quiet, picturesque village of Bolam, was bought 16 years ago by owner and experienced chef, Paul Stabler, along with his wife Alison, when it was nothing but a derelict building.

Over the years, they have transformed it into a successful business, offering their thousands of customers a selection of traditional meals and drinks, and catering for happy brides and grooms looking for somewhere special to hold their wedding event.

They also introduced great party nights for families and friends, as well as establishing a 20-pitch caravan and camping site with highly-finished shower and toilet facilities.

The campsite is very popular through the spring and summer months, with a children’s large play area, and beautiful views, where families can relax in the quiet and peaceful surroundings.

The business has been a real family affair over the years, with Paul and Alison’s four children being involved in pot-washing and serving in the bar.

Now, with an eye to the future, Paul and Alison are launching a new take on traditional country dining, starting in December.

Paul says: “We have listened to our customers views and have invested money to bring them an exceptional dining experience.

“We are looking forward to serving our customers traditional afternoon tea, including freshly-made cakes and other tasty treats.

“In addition to our highly popular carvery, we have updated our menu that will offer customers tasty, fresh, sea food - including fresh fish and chips - and other traditional dishes, from chicken parmesans to salmon à la creme.

“Our popular loyalty scheme is now back, and customers will receive special offers when they dine with us.”

In addition, they have introduced a collection takeaway service, with the menu on the website, and ordering by telephone or in person. From January, they will be providing a delivery service on takeaway orders.

The Countryman has also undergone redecoration to provide customers with a cosy and atmospheric experience, and opening hours have been extended to ensure that no one misses out on the exciting offers and deals!

Paul and Alison are looking forward to welcoming their many loyal - and new - customers, to The Countryman to enjoy the new features.
