PURPLE chillies and Tuscan kale are just some of the fresh produce being cooked up into healthy dishes for a free feast to feed 1,000 diners.

About 100kg of fresh fruit and vegetables have been donated for the annual Middlesbrough Town Meal which is being served up tomorrow (Saturday) in the town’s Centre Square from noon to 4pm.

A team of school cooks and staff from Middlesbrough Environment City (MEC) descended on Whinney Banks Primary today (Friday) to wash, peel and stir.

On the menu will be leek and potato soup, salads, roasted vegetables and pasta. The chillies will be combined with apples into a sweet chilli chutney and the Tuscan kale will be blended into a Mediterranean vegetable soup. Bread rolls from Stonehouse bakery and traybake cakes from Larchfield Community, which gives opportunities to adults with disabilities, will also be served.

A bubbling pot of pink berries was being transformed into a fruit compote by Janet Welsh, catering supervisor at Middlesbrough Council, who said she could always dream up a dish no matter what ingredients landed on her chopping board.

Catherine Howell, a community enabler from MEC, said: “This is all about encouraging people to grow their own food and enjoy locally sourced produce because of the environmental implications, it’s also infinitely healthier for people, both physically and mentally."
