Trainee chefs get a taste of the trade
CATERING students have received guidance on a sweeter future from an internationally renowned confectioner.
Ildo Nicollelo visited the kitchens of Darlington College to give a two-day workshop on the artistry of chocolate.
Mr Nicollelo has nearly 50 years worth of experience in the industry with London hotels and training chefs across the world.
He showed the college's would-be chefs a range of hints and tips about the trade.
The sessions were arranged as part of the Learning and Skills Council scheme, World Skills initiative.
The students learnt a variety of techniques including tempering and moulding chocolate, creating flower and ribbon displays, caskets and liqueur centres.
Darlington College patisserie tutor Donna Joyce said: "It has been absolutely fantastic to have someone of Ildo's calibre come here and teach the students some skills that I'm sure will stand them in good stead in their future careers."
Ildo added: "They've been a great bunch to work with and hopefully they've picked up a few new techniques."
