AN enterprising guest house owner is serving up authentic Roman recipes to complement a newly-opened trail.

Pauline Staff, who runs Holmhead Guest House, at Greenhead, Northumberland, is offering visitors to Hadrian's Wall National Trail authentic Roman omelettes made with eggs and nuts, freshly squeezed apple juice with honey, and a secret recipe of Roman bread.

The Roman breakfast is available to bed and breakfast guests, and others can also buy the bread and juice.

In addition to the breakfast, guests can sample Roman herbs from Holmhead's garden and an adapted Roman sauce.

Roman organic wine is available to buy from the premises.

Ms Staff said: "I have built the business up over 20 years, and over that time, I have recognised that you need to constantly look for new ideas to meet the changing needs of visitors.

"For instance, I realised that the concept of open-plan rustic bunk barns were increasing in popularity, and there were not many available on the Wall.

"I applied for funding to convert my barn, installing lighting, beds and a living area, and I am delighted that this is now open and proving such a draw for ramblers and families who want to really experience rural Northumberland."

As the result of her efforts, Ms Staff has received a national tourism award and an environmental award.
