A FORMER chef at the world-famous Ritz Hotel in London is to set up shop at a humble Teesside farmers’ market.

Ed Trewhitt, who owns The Brickyard Bakery in Brotton, east Cleveland, will serve up his breads at Stockton Farmers Market on Saturday, May 31.

Mr Trewhitt, originally from Redcar, trained at Kirby College in Middlesbrough before becoming a trainee at the Ritz, working in the industry for 20 years and setting up restaurants across the North-East. However he has now left the restaurant industry.

He said: “I feel it’s so important to really be in touch with where our food comes and from and what we’re eating.

“There was a real need for a traditional bakery in the area, where bread was baked with technique and timing rather than using chemical raising agents to produce a good loaf.”

Lorna Jackson, who organises the farmers’ market, said: “I’m a big fan of the Real Bread campaign which is what Ed is all about: pure and simple bread with no processing aids or artificial additives.”
