Morning Readers! Well, we've had the European Football Competition and The Queen's Diamond Jubilee but now it's time for the 2012 Olympics.

I must say, I do like to watch the athletics and want to wish our British Athletes well, whatever events they are taking part in.

The whole Olympic theme has really got me thinking this week about how the athletes, which ever country they come from are all trying so hard and striving to get the gold medal they have trained so hard for.

In a way, we're all like Olympic athletes only our gold medal is our target weight. We're still working hard and striving to reach our target. Our gold medal is knowing we've got rid of those unwanted lbs. Are we going to be the Olympians of the weight loss?

All we need to do is keep our focus and remember what we're working for. It's not a race against the clock and therefore it doesn't matter how long it takes. It's all about being the best we can be and doing the best we can. Nothing is impossible!

How has your week been? I'm pleased to say I've had a great week and I lost an amazing 5lb. I've followed the healthy eating plan and and have got a fantastic result.

Not only have I lost the 3lb I gained last week for my birthday but I've lost another 2 to go with it. I'm really happy with that. I've only got to lose another 3.5lb to reach 7and a half stone.

As soon as I reach that next milestone, I'll add another picture to see if you can tell the difference. Hopefully you will be able to see a difference between my starting picture and where I'm at currently.

Beef Chilli and Golden Vegetable Rice

This week in our Slimming World group, we were talking about our favourite recipes. It's so funny to think about us all losing weight but talking about our favourite food.

That's the best thing about Slimming World, you can still have all your favourite foods just by switching some of the ingredients.

I was saying that this week I've enjoyed our home made chilli. I have to say that we also used our own home grown chillies in it which made it even more satisfying. It's simple to make and I've also included a picture so you can see how delicious it is.

Ingredients

1 Red Onion (chopped)
2 Cloves of Garlic (chopped)
Lean Minced Beef
Tomato Puree
Tin of Chopped Tomatoes
Tin of Kidney Beans Mushrooms (diced)
Mixed Peppers (diced)
2 Red Chillies (depending on how hot you want it)
Fry Light Spray
1 packet of Golden Vegetable Rice

Method

1. Fry the onion and garlic using the fry light.

2. Add the lean minced beef and cook for about 5 mins. Drain off any fat from the pan.

3. Add the chillies and simmer for a minute.

4. Place your rice in a pan of boiling water and cook.

5. Add the tinned tomatoes, puree and kidney beans to the chilli and simmer for 5 mins.

6. Add the mushrooms and peppers to the chilli and simmer for a further 10 mins or until the rice is cooked.

It makes a fabulous meal and can even be frozen for another day. If you like it extra spicy, you can use chilli powder too, to give it that extra bite.
