Morning Everyone! How was your weight loss this week? I hope you've all been successful. I'm pleased to say I lost 4lb this week which I'm thrilled about. In total that means I've now lost a total of 7st 1.5lb.

I had a long chat with my Slimming World Consultant who told me of what I could do if I was suffering with the lymph oedema. If I cut down on my carbohydrates and increase my protein, that should help.

I must be stupid, but I really didn't realise that things like pasta, rice and potatoes could make you retain water. By increasing the amount of meat or fish and salad or vegetables I have and decreasing the potatoes etc, it will help me get rid of some of the excess fluid.

After our chat, I put this to the test and am pleased to say, I lost 4lb this week which has given me the confidence boost I needed to get back on track and keep motivated. I've done so well up until now and hadn't realised just how easy it was to lose control and become disheartened.

I've come too far to let this happen now. Yes; it would have been so easy to give up but there are so many people who said, "Oh, you're trying another diet then! Do you think it will work this time or will you get bored?"I can assure you all, this time I won't give up and I will reach my target of 10st.

My Husband is doing so well too. He lost another 2.5lb this week and in total has lost 6st 12lb. He has another 4st to get to his target but again, I know how determined he is to get there.

Between us we've lost a grand total of 13st 13.5lb. That's the ideal weight of a person who's 6ft 4. Before I started at Slimming World, I never thought we'd be this far down the line. My Husband would never eat vegetables or salad, whereas now he eats every scrap and even enjoys a stir fry which is made up of vegetables.

It's never too late to make a change in your life. If you're unhappy with your weight, why not give Slimming World a try. With one or two changes, you can still have your favourite meals and if you have a big appetite, you need never go hungry.

People say you need to eat less and exercise more to lose weight. At Slimming World, it's all about making simple changes to the food you eat to make it healthy. I actually eat more now than I did before I joined. Don't put it off until tomorrow, start today and make that difference. You'll be so glad you did.

Southern Fried Chicken

Ingredients

Chicken Breasts
1tub of Chicken Bovril Paste
1 Egg
1 Clove of Garlic, crushed
2 tsps of Ground Black Pepper
2 tsps of Mixed Herbs
1 tsps of Mild Chilli Powder
2 tsps of Mixed Spice
4 slices of Brown Bread

Method

1. Place the chicken in a large pan and fill with water. Bring to the boil and simmer for 30 mins.

2. Drain and leave to cool, then remove the skin and pat dry. Then cut the chicken into strips.

3. Place the bread and the mixed herbs into a food processor and blend until it becomes crumbs. Then place in a large dish.

4. Scoop out all of the bovril paste into a bowl. Mix in the egg, garlic, pepper, mixed spice and chilli until you have a gloopy paste.

5. Turn the oven on to the highest setting and spray a baking tray with fry light. Coat the chicken in the paste (not too thick though).

6. Roll in the breadcrumbs and place on the baking tray.

7. Place in the oven for 10-15 mins or until they are golden brown and start to go crispy.

8. Serve with Slimming World Chips and salad.

It's a fantastic recipe which is a great substitute for a famous Fast Food place. It won't only help you save lbs, but £'s too.
