Morning Readers! I hope you're having a great week and you've managed to escape the rain without any damage to property or belongings.

My home was untouched thank goodness but I know my Mum's home was flooded and the mess that has been left behind is heartbreaking.

On top of that, we also had to have the family dog put to sleep. We knew the time was coming but it really doesn't make it any easier especially when you have to make that awful decision. As you can tell, it really hasn't been an easy week at all.

As the title of this weeks blog suggests, my weight loss wasn't as I expected it to be. I really don't know what on earth is going on at the moment. I stayed the same this week which I know is much better than a gain but I really was expecting a loss.

I just don't honestly know where on earth I'm going wrong. I know the eating plans work otherwise I wouldn't have had the success that I have had so far. I've always said 100% honesty and no excuses and I still stick with that.

I just don't know why I'm not losing. I'm feeling quite low because of it and although I won't give up, I have seriously thought, "What's the point?"

Have you ever felt like this and did you manage to overcome it? I really don't want to lose the plot now after having done so well. Any advice and support would be greatly appreciated.

On a positive note, I have gone down another size in tops. I'm trying so hard to keep focused on the positive things so the negatives don't drag me under. I think I just feel like a fraud when people say to me, "You've done so well and lost over 7st!".

I reached my 7st award on the 30th May and since then I just seem to be going up and down. Have you gone through a phase like this? What advice could you give me? I feel I need so much support at the moment so please keep your comments coming through on the page.

I'm Still Enjoying My Favourite Restaurant Meals!

When my Husband and I used to go out for a meal once a week, I loved to eat Cannelloni with a slice of garlic bread and a salad. Unfortunately, the restaurant changed their menu and my favourite dish wasn't on the new one. I'm now pleased to say that I have found a recipe that will still allow me to eat my favourite meal but it will also fit in with my healthy eating plan. Have a try and see what you think.

Baked Cannelloni

Ingredients

8 Cannelloni Tubes
A few basil leaves, torn
2 level tbsps grated Parmesan Cheese

For The Filling:

227g/8oz Fresh Spinach, washed and trimmed
227g/8oz Quark
Freshly Grated nutmeg
1 egg yolk
Salt and Ground Black Pepper

For The Sauce:

426ml/¾pt Passata
Pinch of Sugar
1 Garlic Clove, crushed
Salt and Ground Black Pepper

Method

1. To make the filling put the spinach in a saucepan with 2 tablespoons of water. Cover with a lid and cook very gently over a low heat for about 5 minutes, until the leaves are limp and bright green. Drain in a colander, pressing down on top of the spinach with a saucer to squeeze out all the liquid.

2. Chop the spinach and mix with the quark, nutmeg, egg yolk and seasoning. Spoon the filling into the cannelloni tubes and arrange them in an ovenproof dish.

3. Mix the passata, sugar, garlic and seasoning together and pour over the cannelloni. Sprinkle with basil and Parmesan cheese and bake in a preheated oven at 200C°/400°F/Gas Mark 6 for about 20 minutes, until bubbling and golden brown.

4. Serve with a big mixed salad.

I can't wait to try it especially as we'll be using our own home grown spinach. You could swap the quark for fat-free natural cottage cheese if you wish. It's a meal that all the family can eat and enjoy. When losing weight, you don't want to have to be cooking different meals for different family members as that's when it's too easy to be tempted on to the path to wrack and ruin.
