I don't know about you but I love Our Royal Family and admire the work they do. Congratulations to HM The Queen on her Diamond Jubilee.

This last week I went to London for a special Service which involved HRH Prince Charles and The Duchess Of Cornwall.

It was a service of Remembrance and Re-Dedication for The Victoria Cross and George Cross Association and I have to say it was a very humbling service and I was extremely lucky to be able to share in something so special.

I have to say that while we were away, it was really difficult to stick to the healthy eating plan. We didn't have a lot of time in between events and our transport home so it was a case of grab what we could and deal with it when we get home.

I did find it hard to get back on track this week after living the high life in London and eating foods that I haven't eaten for a long while. It took me until Sunday to get my head back in gear and unfortunately I gained half a lb.

It could have been much worse if I hadn't turned things round. So although it was a gain, I was pleased it wasn't too bad. I am back on track now so let's see what I do next week. How was your week?

My Husband and I were invited to a BBQ by a friend from my Slimming World Group during the week. Unfortunately, the weather was to put a stop to the BBQ but instead, my friend put together a fantastic weight loss and Slimming World Friendly buffet.

You can see from the picture how fabulous it was and it even included a strawberry gateaux that was so low in calories but tasted absolutely gorgeous. I'll definitely be getting the recipe and sharing it with you all. What did you have for your Jubilee Celebrations?

Healthy Feast For A Hungry Football Fan Whether you love or loathe football, the Euros Football Competition will be coming to our TV screens this Friday. If you're like me, you'll be glued to the TV over the next three weeks as I love football.

I certainly won't be going to Poland or the Ukraine judging by all trouble that's predicted so I'll be waving my England flag from home. Usually it's a time when we would get all the snacks out and generally, really unhealthy junk food like crisps, pizza and take aways.

This year, thanks to Slimming World, I'll be supporting my Country and also losing the lbs. I've included some great ideas for a BBQ that will see you losing those lbs.

Bacon Burger With BBQ Relish
(serves 4)

Ingredients
1 bunch spring onions
380g extra lean minced beef
2 tsp freshly chopped parsley
Salt and freshly ground black pepper
Half a small red pepper
2 ripe tomatoes
1 tsp barbecue seasoning
2 tbsp freshly chopped chives
4 rashers back bacon, all visible fat removed
Green salad leaves
4 x 60g wholemeal rolls

Method

1. Finely slice the spring onions, place in a bowl with the beef, parsley and seasoning. Combine with your hands and shape into 4 burgers about 10cm/4in in diameter. Cover and chill for 30 minutes.

2. Make the relish. De-seed and chop the pepper, chop the tomatoes, mix with the barbecue seasoning and chives, cover and chill.

3. Place the burgers under a medium/hot grill for 6-7 minutes on each side until cooked through. Add the bacon for the last 5 minutes of cooking. Layer the salad leaves, bacon, burger and relish in the rolls and serve immediately.

You could add a cheese slice if you wish.

Spicy Lamb Kebabs Ingredients 340g/12oz lamb, all visible fat removed ¼ tsp each dried cumin, ginger, chilli and garam masala Fry Light 454g/1lb mixed vegetables including mixed peppers, cauliflower, broccoli. (the more colourful it is, the more appetising it is) 1 tbsp Chat Masala or Curry Powder Method 1. Cut the lamb into cubes and place in a bowl, add the dried spices and mix together to coat the lamb. Leave to marinate in the fridge for at least 20 minutes (overnight if possible).

2. Preheat the grill to hot. Thread eight skewers with the lamb, place under the grill for 15 minutes, turning regularly until cooked through.

3. Meanwhile, spray a wok or large frying pan with Fry Light. Add the vegetables, sprinkle with chat masala/curry powder, mix well and stir-fry for 5-8 minutes ensuring that the vegetables are well coated with the spices.

4. Divide the vegetables between four serving plates, arrange the kebabs on top and serve immediately.

You could serve the kebabs with a large crisp salad and some mint-flavoured yogurt. If you don't like lamb, you could swap it for chicken, pork, beef or king prawns instead.

I don't know about you, but I can't wait now. Not only will the football be exciting but the fabulous, healthy food that we can eat during the match will make it all the more special. You could even have friends round and serve this meal without them even knowing it's part of your weigh loss plan. "It's in the back of the net!" Do you want to enjoy the summer without gaining the lbs? With these recipes, it's certainly possible. You don't have to compromise on the foods you love either. By making a few simple changes, you can start living life to the full. I certainly am.
