Morning Readers! I hope you've all had a great week and the beautiful sunshine and warm weather have helped with your weight loss.

It's just a shame the warm sunny weather hasn't lasted for the extra long bank holiday weekend.

I've been worried all week as I knew I had to weigh in a day early and it would be an evening weigh in where as I'm usually weighed in first thing in the morning. I know that your weight can fluctuate so much during the day so I had a feeling that I would probably gain.

I'm thrilled to say that I didn't gain and I have finally broken through my 7st mini target. I've now lost 7st 2lb in total. To say I'm ecstatic would be an understatement.

If I had £1 for every time I've told someone to only get weighed once a week I'd be a very rich woman by now. It's a problem that many people have when trying to lose weight. I know as I've done it myself in the past.

If you go to a Slimming Club, I urge you to take the batteries out of your scales at home and only get weighed at your group with your Consultant. If you're losing weight by yourself, only get weighed once a week at home and make sure you stick to the same time each week.

Every week in group, I hear people say, "When I got weighed at home, my scales said I'd lost more!", or "I'm surprised I lost as my scales at home said I'd gained!". I've seen people become so obsessed with getting on the scales that they're on them 2 or 3 times a day. It can also be one of the biggest reasons to give up too.

Imagine you've had a good week, you get on your scales expecting to see a great difference midweek and it says you've gained. Would you become despondent and lose the plot thinking, if I've gained I may as well have something bad? I've been there in the past and have given up because of the scales at home.

When I gained midweek, I would avoid going to my group weigh in. I'd then think that I had plenty of time to make up for it so I'd pig out and then not go the following week either. It was a recipe for disaster with me and it was all caused by getting on the scales midweek. It really isn't worth it.

If you belong to a Slimming Club, I seriously urge you to put your scales away in a cupboard where you won't be tempted to use them. If you're doing it on your own and are finding it hard to stay off the scales between weekly weigh ins, why not go to your local Boots Pharmacy and get weighed once a week. You could even walk there and enjoy the exercise as you go. It will all help to keep you on your weight loss journey.

A Diamond Feast For The Jubilee

How will you be celebrating the Queen's Diamond Jubilee? Will you be having a street party or just a small celebration with family? For me, it'll be a quiet day but I will be waving a Union Jack in celebration of Her Royal Highness, Queen Elizabeth II.

My Husband will be working as for him it's one of the busy days so we'll have a little buffet when he gets home. One thing we have missed since we've been losing weight is Scotch Eggs. Thanks to Slimming World, we've got a healthy recipe that means we can still enjoy them without the calories. try them at your Jubilee Celebration!

Special Scotch Eggs

Ingredients
6 medium eggs
400g lean pork steaks, all visible fat removed, roughly chopped
125g rind less lean bacon, all visible fat removed, finely chopped
1-2 tsp mild curry powder
2 tbsp dried parsley
1 tsp dried mixed herbs
salt and freshly ground black pepper
50g dried wholemeal breadcrumbs
One calorie cooking spray

Method

1. Preheat the oven to 200°C/Gas 6.

2. Put four of the eggs into a pan of cold water and bring to the boil. Boil for 5-6 minutes then plunge into cold water for another 4 minutes. Carefully peel and set aside.

3. Place the pork steaks, bacon, curry powder and dried herbs into a food processor. Season to taste and blend until fairly smooth. Transfer to a bowl and divide the mixture into four portions.

4. Flatten a portion of the mixture in your right hand and, with your left, take an egg and wrap the mince around it until it's fully encased. Repeat for the remaining three boiled eggs.

5. Spread the breadcrumbs onto a wide plate.

6. Beat the remaining eggs and dip each Scotch egg in the beaten egg and then roll in the breadcrumbs. Place on a baking sheet lined with non-stick baking parchment and lightly spray with low calorie cooking spray.

7. Place in the oven and cook for 20 minutes or until lightly golden. Let them cool completely on kitchen paper before serving them at your buffet or picnic.

Whatever you do on this extra special Bank Holiday, enjoy yourself. If you do over indulge, remember tomorrow is a new day. Draw a line under the bad day and move on. Why turn a bad day into a bad week? I'll add another picture once I get to 8st so you can see the difference from when I started.
