Morning Readers! What can I say other than what fantastic weather we're having this week. It makes us want to get those salads out and eat healthily.

I hope the warmer weather has helped you get great results this week. I'm pleased to say I lost another 3lb this week and am only half a lb away from 7st. People in my Slimming Group thought I'd be disappointed that I missed my next target by half a lb but I'm not.

I'm at the point now where any weight loss is a bonus. I never thought that in just over 10 months, I could be almost a third of the way through my weight loss journey.

My BMI has gone down by 20 and although it's still very high, it's coming down nicely.

My Husband has also lost an amazing amount of weight and has lost a fantastic 6st 6lb.

It's great as he can now go into most shops now and get clothes to fit rather than having to pay a fortune for bigger sized clothes from stores for bigger sizes. He wants to lose another 4.5st to reach his healthy range for his height.

I can't wait to be able to buy clothes from any shop rather than having to go to plus size shops that expect you to be 6 foot tall just because you're bigger. Sleeves of blouses and jackets always seem to come 5-6 inches over the ends of my hands.

It's the same with trousers and skirts. Sometimes I look like a child who's playing dress up in Mummy's clothes. One day I will go into any shop and will succeed in buying casual clothes without the hefty price tag.

The dream is finally starting to become a reality at last I'm hoping to lose the half lb this week but am concerned about the weigh in.

I can't attend my usual class on Wednesday Morning, so am weighing in on Tuesday Night instead. I don't know what difference it will make as I've never been weighed on an evening before and will have eaten during the day.

I know your weight can fluctuate throughout the day so am unsure how it will pan out. Tune in next week to see how I get on.

Breakfast Really Is The Most Important Meal Of The Day!

I've been talking to friends recently to see what they have for breakfast.

Some of them didn't have breakfast and admitted they were "starving" by 10:30. When it came to lunchtime they just wanted to stuff their faces as they were so hungry.

Those of us following the Slimming World Plan were having a good breakfast every day and although we were ready for our lunch, we didn't feel as if we were starving.

A decent breakfast gives us the fuel to get us through the day. Some of the people I talked to said they got bored of cereal and fruit.

I want to share a recipe with you which will have you looking at breakfast in a whole new way.

Breakfast Muffins
(makes 6-8 when using 6x4" silicone baking cases)

Ingredients

3 Linda McCartney Rosemary & Red Onion Sausages
6 bacon medallions
Chopped mushrooms
8 eggs
Sliced tomato
Ground Black Pepper (optional)

Method

1. Preheat the oven to 180/ 350 or Gas Mark 4

2. Cook sausages cut into 1/4 an put two in each of the silicone cases

3. Grill the bacon and mushrooms then chop up

4. Whisk the eggs in a bowl, add the bacon and mushrooms to the egg and season with the black pepper if you want to add it

5. Mix well, then pour the mixture into the cases over sausages. Top with sliced tomato.

6. Bake in oven at 180 for 20 to 25 minutes.

These taste gorgeous and can be served hot or cold so can even be made the night before.

You could even put it with a tasty salad and have it for lunch or as a main meal with new potatoes and salad.

I can guarantee you will enjoy it and for those of you who hate breakfast, you might even find it becomes your favourite meal of the day.

There's no reason you couldn't start your day every day with a full English Breakfast.

Make sure you cut any fat off the bacon and grill everything. If you need to fry items, use the fry light spray as it's very low in calories.
