Morning Readers! I really hoped we were starting to get the nice weather so that we could start with the nice summer salads and we could pack up our winter wardrobe.

How wrong was I?

It's cold, grey and wet outside and the last thing I feel like doing is eating a salad.

I had a bad start to the week and was still trying to get my head back on track but was finding it hard. I eventually gave myself a stern talking to and made myself realise I was throwing away everything I'd worked so hard for over the past 9 months.

I did gain half a lb but I'm now back on track.If I'd kept on going on the self destruct mode. It would have been much more. Thankfully, I seem to have got a grip of myself and have got back to my healthy eating ways.

It is so easy to lose control.

I have to say, I'm so proud of my friend who yesterday in group reached her target after losing 3 and a half stone.

She looks absolutely stunning and it's inspired me to keep going to get to my target. Another friend lost 4lb and a lady who joined 6 weeks ago has now lost over 2st.

When you see results like that, it really does inspire me to get back on track to finish what I started. I've quit before but there's no way I'm going to quit this time. The only failure in life is the failure to try. It doesn't matter how many times we fall, the only thing that counts is how many times we're willing to pick ourselves back up and try again. In my eyes, that's success.

How has your week been?

I'm going all out this week to lose the 1.5lb I've gained over the past two weeks. I'm also hoping to lose a bit more besides. I know I won't be at my target weight of 10st this summer but I want to be much lighter for my birthday in 12 weeks time.

If I were to lose a healthy 2lb a week I could have lost another 1st 10lb which would give me a total loss of 8st 3lb. I'm certainly going to try. How much do you want to lose by the summer?

Curry Heaven

I came across a fantastic recipe recently for Chicken Korma. If you're anything like me, you'll love curries. I don't like them too hot but I always enjoy a curry with vegetable rice and onion bhajis. Try this recipe and let me know what you think. I certainly don't miss the curry from our local take away anymore. I can still enjoy a curry without ruining my weight loss.

Chicken Korma (serves 4)

Ingredients

4 Chicken Breasts
Any Vegetables you wish to add
4 Chicken Oxo cubes
4 Curry Oxo cubes
2 Coconut Muller Light
200ml Low Fat natural yogurt
Fry Light Spray

Method

1. Spray a frying pan with Fry Light and cook the chicken and any veg you want to add.

2. Crumble the chicken and curry oxo cubes and stir well.

3. Add the coconut muller light and the low fat natural yogurt making sure you stir well.

4. Simmer for a few minutes and serve with vegetable rice.

Onion Bhajis (serves 4)

Ingredients
200g/7oz onions, peeled, halved and thinly sliced
50g/2oz gram flour
1 tsp lemon juice
2 tsp ground cumin
1 tbsp coriander seeds, crushed
1 tsp deseeded and chopped fresh green chilli
1 tbsp freshly chopped coriander leaves
¼ tsp baking powder
salt

Method

1. Place the onions, gram flour, lemon juice, cumin, coriander seeds, green chilli, chopped coriander and baking powder in a mixing bowl. Season with salt and add a few tablespoons of water to form a thick batter that coats the onion. Leave to rest for 15 minutes and then, using your fingers, mix again to combine thoroughly.

2. Preheat the oven to 220°C/Gas 7. Line a baking sheet with baking parchment and using your fingers or a dessert spoon, drop small amounts of the mixture onto the prepared baking sheet to give you 12 bhajis.

3. Spray with Fry Light and bake for 15-20 minutes until golden. Remove from the oven and serve immediately sprinkled with paprika.

 

I hope you enjoy it as much as my Husband and I did. As part of our vegetables, we added chillies, peppers, peas onions and small florets of cauliflower. The chillies gave it a bit of a bite and it really was yummy. It's a great meal that you can enjoy as a family too so it's a winner all round.
