Morning Readers! How are we all doing with our battles to lose the lbs? I'm afraid I've had an awful week but managed to lose 0.5lbs.

I'm happy with that because I have been quite ill with a stomach bug which has stopped me eating for almost a week. It also gave me a temperature reaching 39 degrees C which knocked me for six.

I know that when I don't eat, my body tends to store fat and I usually tend to gain weight. Also I've been having to take medication to rehydrate my body which contains a lot of sodium which again tends to have an impact on my weight loss as usually I tend to avoid anything which has a high salt content.

I'm pleased to report that I am now back to eating again although it's still very little but at least it's a start.

How many times have you used the excuse, my weight loss results weren't very good this week as I haven't done as much exercise?

I'm sure we've all done it if we're really honest, but did you know it won't actually make that much difference?

Exercise can help you tone up your body but the weight loss it's actually down to what you put in your mouth.

If you were to lose 1-2lbs a week by exercise alone, you would have to jog for more than 1 hour a day for a whole week. I know I certainly wouldn't be able to do that.

That's why it's so important to make sure your eating plan is as healthy as possible but also you have to be totally honest. After all, the only person you're cheating is yourself.

Remember, no more excuses!

Chicken Breast Pizza
(serves 4)

Ingredients
4 boneless chicken breasts
I tube of tomato puree
45g of grated mozzarella cheese (per chicken breast)
Mixed dried herbs
Ground black pepper

Method

1. Slice the Chicken Breasts in half and grill them on both sides until they are fully cooked.Once cooked, leave them to rest for 5 minutes.

2. Once the chicken is rested, cover the chicken with tomato puree mixed with the dried herbs and ground black pepper, then sprinkle 45g of mozzarella cheese over the top then place them back under the grill until the cheese is melted.

3. Serve with a salad and new potatoes or even the Slimming World Chips.

It's a really easy meal to make and it tastes fantastic. I've added a picture of the meal we had so you can see how great it looks. It's certainly a firm favourite in our household. It's great for the kids too.
