Morning Readers! I hope all you're doing really well with your weight loss. I've had a mixed week as I started off badly but started to tell myself, "What on earth are you doing? You'll never achieve your goal if you keep mucking about and cheating." I then got back on track and managed to lose 1.5lb.

It makes me mad when I think of how well I could have done if I'd stuck to plan. It really is too easy to fall of the rails. We need to recognise the situations that are likely to push us off track and find a solution so we don't fall. Some people find watching TV on a night is a trigger point, others find having children and picking on their left overs causes them to come off track.

For me, stress is a major problem. When I get stressed, I tend to eat for comfort. In this day and age, stress is hard to avoid so I have to find other ways to deal with it. What are your trigger points?

Carol, our Slimming World Consultant, gave us a great tip for those who have children and are likely to pick on their left overs. She told us to keep a bottle of washing up liquid handy and as soon as the children have finished their meal, squirt their plates with washing up liquid. That way you won't want to pick off their plates and it also means they're ready to wash up.

For those who tend to pick on an evening while watching TV, a great tip is to take up a hobby that is more likely to keep your hands and brain occupied. Something like knitting, cross stitch, crosswords or suduko. It will actually stop you wanting to reach for the biscuit tin. As for stress, I'm still trying to find a solution for that one so any tips would be really helpful.

Spicy Chicken Burgers With Tomato Salsa

Ingredients:

113g/4oz Runner Beans

1 bunch Spring Onions

681g/1½lb lean Chicken Mince

2 tsp mild Curry Powder

Salt and freshly ground Black Pepper

Fry Light

2 large ripe Tomatoes

1 tbsp Worcestershire Sauce

2 tbsp freshly chopped Chives

Method:

1. Trim the beans. Bring a small saucepan of water to the boil, add the beans and cook for 5-6 minutes or until tender. Drain well and rinse under cold running water until cool, then chop very finely. Set aside until required.

2. Trim and finely chop the white and green parts of the spring onions. Place in a large mixing bowl, and stir in the chicken mince, curry powder, seasoning and cooled beans. Mix well until thoroughly combined.

3. Preheat the grill to a medium/hot setting. Divide the mixture into 8 portions and form each into a flat burger about 8cm/3.5in in diameter. Line the grill tray with foil and spray lightly with Fry Light. Arrange the chicken burgers on the foil and spray with more Fry Light. Cook for about 10 minutes on each side or until golden and cooked through. Drain well.

4. Meanwhile make the tomato salsa; finely chop the tomatoes and place them in a small bowl along with the Worcestershire sauce, chopped chives and seasoning to taste. Mix well and set aside for the flavours to develop, until ready to serve.

5. Place 2 chicken burgers on to each of 4 serving plates and serve with a little of the tomato salsa and some mixed green salad leaves. You could also make some of the Slimming World Chips or Wedges and serve with the burgers, salsa and salad.
