Morning Readers! I hope we're all feeling great and those unwanted lbs are melting away. I had a gain this week but was expecting it due to a sudden bereavement.

I know Easter is always a tough time for people especially when it's school holidays and the Easter Bunny comes knocking at the door.

If you've gained some weight over the past couple of weeks, don't worry about it. You haven't blown your entire journey so just pick yourself up, dust yourself down and put it behind you.

It happens to all of us from time to time whether it be a family holiday, Christmas, birthdays or just a general "having the munchies" week.

Are you going to pick yourself back up and crack on with it so you can look gorgeous on the beach this summer or are you going to give up and hide away?

At our Group this week Carol, our Consultant, talked about a lady who had lost an amazing amount of weight.

There was an interview on the Slimming World page where a question was asked about what she missed about her old lifestyle.

She told the interviewer, "I don't miss anything at all. I really don't miss getting out of breath walking along the street."

Carol asked the group what we wouldn't miss and I have to say, I hadn't realised that others experienced the same worries and problems that I do. This is a list of things that we won't miss:

  1. Asking for a seat belt extension on a plane.
  2. Being able to take the children to a theme park and not be turned off the rides for being too big.
  3. Sweating on a really hot day.
  4. Having to wait an extra hour for a bus because you couldn't run to catch the one that was in the stand.
  5. Not feeling like you've climbed Everest when really you've only climbed half a dozen small steps.

What do you not miss about being overweight? Keep those thoughts at the back of your mind as you go through each week. When you reach for the extra slices of bread, ask yourself, "Do I really want to feel embarrassed asking for a seat belt extension on the plane this summer?" This week I feel really fired up to keep going and lose more weight. This is my time to shine and I am going to go for it!

Speedy Chicken Vegetable Rice

Ingredients

400g cooked, skinless chicken breast, roughly shredded
425g cold, cooked white long grain rice
300g pack crunchy stir-fry vegetables
4tbsp light soy sauce
2 Eggs, lightly beaten
6 spring onions, finely sliced
1tsp grated root ginger
2 garlic cloves, peeled and crushed or grated
Fry Light cooking spray

Method

1. Spray a large non-stick frying pan or wok with low-calorie cooking spray and place over a medium high heat.

2. Add the garlic, ginger and stir-fry vegetables and stir-fry for 4-5 minutes.

3. Turn the heat to high and stir in the cooked rice and shredded chicken.

4. Stir-fry for 3-4 minutes or until piping hot.

5. Add the soy sauce, stir-fry for 30 seconds and then drizzle over the beaten egg.

6. Cook for 2-3 minutes or until the egg has scrambled.

7. Remove from the heat and stir in the spring onions. Serve immediately garnished with spring onion slivers. You could also use Basmati Rice.
